Lemon Rice


In my canteen in breakfast too caterer's serve lemon rice which I like inspite of so much of bad taste. This time I thought of preparing at on my own. I searched in google and found so many blogs. I liked the one given in Mahanandi's blog because there potato were added :)). I made it and liked so much.

Ingredients: Sufficient For Three People

4 Cup cooked rice
1 Medium potato cut into small cubes
1 Medium onion chopped finely
1-2 Lemons (cut them and take juice to a cup)
6-7 Green chilies (slit in between)
3-5 Dry Red chilies
1 Tsp mustard seeds
1 Tsp turmeric powder
1/2 Ginger-Garlic paste (optional)
1/4 Cup Chana dal (pre-soaked in water at least half n hour)
1/4 Cup urad dal (pre-soaked in water at least half n hour)
15-20 Curry leaves
1/4 Cup peanuts
1/4 Cashews
1 Tblspn fresh coriander leaves finely chopped
Salt as per taste
Oil to fry

Method: Dry roast peanuts and cashews separately and keep them aside.
Now heat oil in the pan. Add mustard seeds, once they starts spluttering add curry leaves ,ginger-garlic paste (optional completely), split green chilies, red chilies, chana dal and urad dal. Fry it untill dal's color changes to light brown. Add chopped onion and chopped potatos. Fry untill they become golden in color and crispy. To this add turmeric powder for the yellow color. Mix well and fry for another 2-3 minutes.Add already roasted peanuts and cashews and stir it for 2-3 min again. Finally add pre-cooked rice and salt as per taste. Sprinkle lime juice and mix simultaneously. Adjust limejuice and salt as per your taste.

Garnish it with chopped coriander leaves and serve.
