Okra/Bhindi is one of my favourite which I can have in any form of recipe. I just love to have this with roti/paratha & curd. Normally I make fried okra having chopped onions. This with baby onions I saw in a magazine and it looked very tempting. So enjoy this version, I am sure you all will love this.Ingredients: Sufficient For Three People
400 Gram lady fingers/bhindi
1 Tsp turmeric powder
1 Tsp roasted cumin powder
2 Tsp ginger-garlic paste
1 Medium sized onion paste
2 Medium sized tomato paste
100 Gram baby onion
1/2 Tsp dry mango powder
Salt as per taste
Method: Wash the bhindi and pat dry completely. Discard both the ends and cut into pieces. Leave the bhindi whole if the size is small otherwise cut into 2 inch long pieces and make slits in the center. Peel the baby onions, wash and leave these whole. Mix salt, dry mango powder,turmeric powder and sprinkle on cut bhindi. Leave aside for about 10 minutes.

Heat oil in a pan and add cumin seeds. once they start spluttering add ginger-garlic paste and fry for 20 sec. Add onion paste and fry for another 2-3 min. To this add tomato paste and fry till tomato starts leaving oil in the corner of the pan. Add baby onions and cover the pan. Let it cook for about 2 min so that baby onions become a little tender. Finally add bhindis and mix well with the other spices. Cover with a lid and allow to cook bhindis over medium flame till bhindis & baby onion are almost tender. Stir it in between.
Once the bhindis are tender serve hot with rice, pickle, puris and chutney :).
