Mix Vegetable With Panchporan

Photobucket We like to eat mix vegetable curry in restaurants most of the times :). It has many ways to make, in a magazine I saw it cooked with panchporan. Panchporan contains five type of spices named as "Fenugreek seeds, Cumin seeds, Fennel seed, Nigella seeds & Mustard seeds". First time I tried this in making mix veg. Taste was amazing :). Try this you will love it. Though to get a bit color I added a little turmeric & red chili powder :). To make this masala just take equal amount of each and grind it. You can keep this masala for long time and use it in any curry or vegetable. It gives wonderful taste.

Ingredients: Sufficient For Two People

1 Cup chopped carrot
1 Cup chopped french beans
1 Cup cauliflower cut into small pieces
1 Cup chopped cabbage
1 Cup potato cut into small slices
1 Cup peas
1/4 Tsp turmeric powder
1/4 Tsp red chili powder
3-4 Green chilies chopped finely
1.5 Tsp panchporan
Coriander leaves for garnishing
Salt as per taste
Oil for cooking

Method: Heat oil in a pan and add panchporan. When it starts spluttering add green chilies, turmeric powder & red chili powder. Now add all cut vegetables and mix well. Adjust salt as per taste. Let it cook on low flame untill cooked properly. When cooked garnish it with chopped coriander leaves and serve hot with roti/paratha and raita. It taste really good.
You can add onion, ginger-garlic paste too while cooking but I feel adding them will spoil the taste which comes with panchporan masala :).

Bhawana,they look nice and we frequently use that in our curries in Orissa.It adds flavour to any curries or dal.

Hey never heard before of this panch foran masala..though i have heard foran in marathi,but this one is amazing,i never have tried this combination...sounds really interesting!

Vidya di, I havenot got this powder from anywhere. as I mentioned all five ingredients I just took them and grind at home.

Divya all five ingredients you must be having. Just take equal quantity of each and use it.
