
Hello friends I am surprised now a days how come I am trying these paneer recipes. And believe me still 400gm paneer is kept in the fridge :)). So let me tell you the secret "Medhaa di" from "Cook With Love". She likes paneer very much and having many delicious recipes in her blog. I did find many variety of recipes in other bloggers too which are in my favourites. Will make a post for "cooking from other bloggers" soon. You all are great people with tempting and mouth watering recipes.. So sometime Medhaa di explain it so nicely that I get tempted to make paneer recipes :)). Because of her only I made paneer paratha and now next is Paneer Jalfarezi. Well this is from one of my magazine which my mom buys every month. What I like here was addition of vinegar which gives heavenly taste. After completing my cooking when I ate it I could not believe that I made it at home. Taste was wonderful :) and obviously my husband was very happy that he is getting retaurant like taste at home :)). So here I go with my recipe. I did not do any modification to the original recipe and sharing with you all :) as it is.
Ingredients: Sufficient For Two People

200 gm Paneer
2-3 Dry red chilies
2 Onions medium sized sliced
2 Tomato medium sized cut into big pieces
2 Capsicum medium sized cut into 1" long pieces
2 Tblsp green coriander chopped finely
2" Ginger sliced
2 Green chilies
1 Tsp cumin seeds
1 Tsp red chili powder/adjust as per taste
1/2 Tsp turmeric powder
2 Tsp vinegar
1/2 Tsp garam masala (optional)
Salt as per taste
Oil for cooking
Method: Heat oil in a pan and add dry red chili and cumin seeds. Once seeds starts crackling add cut ginger and onion. Fry this for 2-3 min on medium flame. Add red chili powder and turmeric powder. Mix well. Now add cut tomato and cook again for 2-3 min. Tomato should not be mushy, just that rawness should not the there. To this add capsicum and mix well. Cook them for 4-5 min. Dont cover the pan. If you see capsicum are not well cooked than stir fry them for few more min without covering the pan. To this now add paneer pieces, chopped green chilies and garam masala. Mix paneer with masala properly and add vinegar & salt as per taste. Cook this for 3-4 min. Now cover the lid for 1-2 min too so that paneer absorbs all spices well and steam cooked too.
Garnish this with tomato pieces and chopped coriander and serve hot with roti/chapati/paratha/nan. I loved this very much :).
